- 2 firm white fish fillets (such as red snapper or catfish)
- 1 tablespoon olive oil
- 1 tablespoon Cajun seasoning
- Juice of half a lemon
- Salt
- 1 cup cherry tomatoes, quartered
- 1/4 cup red onion, finely chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon balsamic vinegar
- Salt
- Pepper
1. Preheat a cast iron skillet over medium-high heat.
2. Rub the fish fillets with olive oil and Cajun seasoning on both sides.
3. Place the fish in the hot skillet and cook for about 3 minutes on each side until blackened and cooked through.
4. Squeeze lemon juice over the cooked fish and season with salt to taste.
5. For the Creole Tomato Relish, combine cherry tomatoes, red onion, parsley, balsamic vinegar, salt, and pepper in a bowl. Mix well.
6. Serve the blackened fish topped with a generous spoonful of Creole Tomato Relish.
